I know you’re probably expecting an Easter recipe from me about now. Not today! The reason? Our grandkids are here on their Spring Break and, honestly, I just haven’t had time to think about Easter dinner yet. Oops. Better start planning that menu pretty soon :-)

What I have been doing is baking up some kid-friendly treats like these Peanut Butter Chocolate Chip Bars. This is an old recipe that I rediscovered recently when I saw it being made on Food Network. I remember it from years and years ago.

The texture is similar to a brownie, but it’s just full of peanut butter flavor. With chocolate chips. And a glaze on top. Yum. Plus, the recipe takes just minutes to throw together and you probably already have everything you need on hand. That’s always a winner for me.

How to Make Peanut Butter Chocolate Chip Bars

Preheat the oven to 350. Grease a 9×13 baking dish or pan. Set aside.

Using a hand-held or stand mixer, cream the butter, sugars, and peanut butter. Add the egg and vanilla.

Measuring the dry ingredients into a bowl.

Sift the flour together with the baking soda and salt. Mix in the oatmeal.

Adding the flour mixture to the stand mixer bowl.

With the mixer on low speed, gradually beat the flour-oatmeal mixture into the creamed mixture.

Batter spread into a baking pan and topped with chocolate chips.

Spread the batter into the prepared baking dish or pan. Sprinkle the chocolate chips evenly over the top of the batter.

Bake for 20-25 minutes until browned around the edges. Remove from the oven and allow to cool for 10-15 minutes before preparing the glaze.

Finished recipe cooling on a rack with glaze spread in the top.

Make the glaze by combining the 1/4 cup of peanut butter, confectioner’s sugar, and milk in a small bowl, whisking until smooth. Spread the glaze evenly over the still warm bars.

Allow to cool completely. Cut into squares and serve.

Ingredients

For the bars:

    Well my ‘boys’ are in their 30’s—-and this ‘kid friendly’ treat will still grab their attention as well as their children’s. What is so magical about peanut butter and chocolate together? Oh well with magical things one doesn’t have to answer.
